Gluten Free Living

 

Living gluten free can have its challenges for anyone diagnosed with coeliac disease, dermatitis herpetiformis or gluten intolerance. The information and support for members, provided by the Coeliac Society, can help make management of the gluten free lifestyle a lot simpler.

 

A basic outline of the gluten free diet is as follows:

 

Foods to include

  • Naturally fresh, unprocessed foods such as meat, poultry, fish and eggs, fruit and vegetables
  • Milk, natural yoghurt and cheese
  • Rice, rice noodles, maize and polenta
  • Single ingredient herbs and spices, salt and pepper
  • Commercially produced alternatives
  • Gluten Free breads, pastas, cereals, biscuits and crackers
  • Gluten Free packet mixes for cakes, biscuits, pancake and pizzas.

 

Foods to avoid

(Gluten-containing foods)
  • Wheat, spelt and rye breads, including sourdough and triticale breads
  • Cereals based on wheat, oats, barley and rye, and any cereal containing malt extract
  • Regular pasta (including gnocchi) and other wheat noodles (e.g. instant noodles, hokkein noodles and soba noodles)
  • Biscuits and crackers made from wheat, rye and oat flours
  • Regular cakes, pastries, pizza dough and pancakes
  • Wheat flour, breadcrumbs, batters
